Blazing Shrimp

Ingredients

1 pound sweet Italian sausage
 3/4 pound lean ground beef
 1/2 cup minced onion
 2 cloves garlic, crushed
 1 (28 ounce) can crushed tomatoes
 2 (6 ounce) cans tomato paste
 2 (6.5 ounce) cans canned tomato sauce
 1/2 cup water
 2 tablespoons white sugar
 1 1/2 teaspoons dried basil leaves
 1/2 teaspoon fennel seeds
 1 teaspoon Italian seasoning
 1 tablespoon salt
 1/4 teaspoon ground black pepper
 4 tablespoons chopped fresh parsley
 12 lasagna noodles
 16 ounces ricotta cheese
 1 egg
 1/2 teaspoon salt
 3/4 pound mozzarella cheese, sliced

                             Instructions

In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water

Season with sugar, basil, fennel seeds, Italian seasoning
,
 1 tablespoon salt, pepper, and 2 tablespoons parsley. 
Simmer, covered, for about 1 1/2 hours, stirring occasionally.

Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

Preheat oven to 375 degrees F (190 degrees C).

To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of 

mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to 

prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.  Enjoy

Chicken Ziti Bake

Ingredients:

1/2 lb boneless skinless chicken breast, cut into 1/4-inch strips
1 onion, chopped
2 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1/2 teaspoon pepper
1 teaspoon italian seasoning
2 cups ziti pasta or 2 cups penne pasta
2/3 cup ricotta cheese
1/3 cup mozzarella cheese, shredded
2 tablespoons parmesan cheese, grated

                                Instructions

(1)Preheat the oven to 375ยบ F.

(2)Spray a large nonstick skillet with nonstick cooking spray; heat. Add chicken and cook, turning as needed, until lightly browned, or about 5-6 minutes. Remove chicken from pan and set aside.

(3)Add onion and garlic to the skillet and cook, stirring as needed, until softened, about 5 minutes. Add tomatoes, Italian seasoning and pepper; bring to a boil.

(4)Reduce the heat and simmer, uncovered, stirring as needed, until the mixture is thickened slightly, 8 - 10 minutes.

(5)Meanwhile, cook ziti according to package directions. Drain and mix with ricotta cheese.

(6)Pour half of tomato mix into a 13x9" baking pan, layer with ziti mixture, chicken and remaining tomato mixture. Sprinkle with the cheeses.

(7)Bake until hot and bubbling and cheese is melted, 15 - 20 minutes.

(8)Suggestion -- if short on time, precooked chicken strips can be used and work just fine

INGREDIENTS

1/4 cup extra-virgin olive oil
2 large cloves garlic, thinly sliced
3 pounds large tomatoes, chopped (about 10 cups)
Coarse salt and freshly ground pepper
8 fresh basil leaves
6 large eggs
1 ounce Parmesan cheese, shaved, for garnish

                              Instructions

STEP 1

Heat oil in a large skillet over medium heat. Add garlic and cook, stirring occasionally, just until it starts to brown around edges, 30 seconds to 1 minute. Add tomatoes, 2 teaspoons salt, and basil; simmer until tomatoes have broken down into a loose sauce, about 20 minutes.

STEP 2

Make a well in tomato sauce with the back of a large spoon and crack 1 egg into well. Repeat with remaining 5 eggs. Season with salt and pepper and cook until whites are set and yolks are cooked as desired, about 25 to 30 minutes. Top with cheese and serve with sauce immediately from the skillet.

Pepperoni Lasagna Roll-Ups Recipe



Pepperoni Lasagna Roll-Ups 

Ingredients
3 lasagna noodles
3/4 cup ricotta cheese
1/2 teaspoon minced chives
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
24 slices pepperoni
3 slices Swiss cheese, cut into thirds
1 cup meatless spaghetti sauce
1/4 cup shredded Parmesan cheese


                                   Instructions
Cook noodles according to package directions; drain. Combine the ricotta cheese, chives, oregano and basil; spread 1/4 cup over each noodle to within 1/2 in. of edges. Top with pepperoni and Swiss cheese; carefully roll up.
Place seam side down in a greased shallow 1-qt. baking dish; top with spaghetti sauce. Cover and bake at 350° for 20-25 minutes or until bubbly.
Sprinkle with Parmesan cheese. Let stand for 5 minutes before serving.

Recipe Ingredients
500 gm Chicken breast fillets
1 lemon Lemon juice
to taste Crushed black pepper
to taste Salt
1/2 tsp Paprika powder
1cup Cornflakes crushed
1/2cup Flour
2 Eggs
for frying Oil
To serve
2 Croissants
as required Butter
as required Mustard paste
as required Mayonnaise
as required Tomato ketchup
as required Lettuce leaves
as required Cheese slices

                                       Instructions

Marinate the chicken fillets in lemon juice salt pepper and paprika for half n hour.
In a separate beat the eggs.
First coat the chicken in flour then coat with eggs and lastly with cornflakes and shallow fry till golden brown
Slice & Toast the Croissants spread some butter and desired sauces dress with some salad leaves and then top with the chicken pieces... yummmy

Gooey Brownies



Ingredients:
1/2 cup butter, melted
1 1/2 cups granulated sugar
1/2 teaspoon vanilla extract
2 eggs
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking soda (omit if you don't want the crunchy crust)
1 cup semisweet chocolate

                                        Instructions


(1)Preheat your oven to 350 degrees Fahrenheit or 175 degrees Celsius.
(2) Melt the butter and lightly grease a pan of your liking (I used an 8x8 because I like a thicker brownie).
(3)In a large bowl; combine the flour, cocoa powder, salt, and baking soda.
(4)In another large bowl; combine the sugar, melted butter, and vanilla extract.
(5)Once combined beat in the eggs, one at a time, mixing well after each until thoroughly blended.
(6)Gradually add in the flour mixture to the egg/sugar mixture.
(7)Toss the chocolate chips in a little flour. (The flour will keep them from sinking to the bottom of the pan.).
(8)Mix the chocolate chips into the batter.
(9)Bake for 20-25 minutes. (The brownies are done if you stick a toothpick in the middle and it comes out clean.



Oven Tacos



                              Oven Tacos

Ingredients:
Tacos
2 lbs ground beef (or turkey or chicken)
1 small onion, diced
4 ounces green chilies, diced
1 1/2 tablespoons taco seasoning (below)
1 (8 ounce) can tomato sauce
1 (16 ounce) can fat-free refried beans
2 cups shredded reduced fat colby-monterey jack cheese
18 -20 taco shells, hard
Taco Seasoning
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper


                                               Instructions

To make taco seasoning, mix all of the ingredients together. Store in an airtight container.

Preheat the oven to 400 degrees.

In a large skillet brown ground beef and onion over medium-high heat. Drain off any excess liquid. Return to pan, add chilies, refried beans, tomato sauce, and taco seasoning. Mix well and cook for a few minutes if mixture seems runny.

Spoon the taco meat mixture into the taco shells and place into a 9 x 13 inch baking dish, standing up. Sprinkle cheese over the top of the taco meat in each shell. Place into the oven and bake at 400 degrees for 10-12 minutes or until the cheese has melted and the tacos are heated through.

Remove from the oven and top with any optional condiments for serving.

                                    Instructions
Combine first 9 ingredients in an electric slow cooker. Add 1/4 cup chicken broth. Cover and cook on low for 7 hours.Combine remaining 1/4 cup broth and flour in a small bowl; stir with a whisk until smooth. Add broth mixture to slow cooker. Cover and cook on low for 30 minutes. Cut turkey into slices.

Ground Turkey or Chicken Patties

Ground Turkey or Chicken Patties



                      Ingredients:

1/2 cup butter flavored cracker, finely crushed (about 12 crackers,like Ritz)
1 tablespoon onion flakes or 1 tablespoon onion, minced
1 teaspoon poultry seasoning
3/4 teaspoon garlic salt or 3/4 teaspoon garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 tablespoon olive oil





                              Instrutions


(1)In a large bowl, mix ground turkey or chicken, crushed crackers, onion flakes, poultry seasoning, garlic salt or garlic powder, thyme, and black pepper.
(2)Shape into six patties each about 1/2 inch thick and 3 inches in diameter or other size as desired. Adjust cooking time if changing size or thickness of patties.

(3)Heat oil in a large nonstick skillet over medium-high heat.

(4)Add patties and cook on all sides for a total of 10 minutes or until nicely browned and internal temperature reaches 160 degrees Fahrenheit on an instant-read thermometer. Or,cut into one cooked patty to make sure it is no longer pink inside.

Ingredients:

1 lb ground chicken
1/2 cup mozzarella cheese, grated
5 tablespoons breadcrumbs
1/4 cup barbecue sauce




Instructions

(1)  Mix together everything except for 1/2 the barbecue sauce.

(2)  Grill on barbecue.

(3 )  While grilling add rest of the barbecue sauce.
